Rude Mac & Cheese

Ingredients
Cheese Blend
2 cups sharp cheddar cheese, shredded
1 cup Gruyère cheese, shredded
1 cup Parmesan cheese, grated
¾ cup cream cheese, softened
Béchamel Base
4 tablespoons butter
4 tablespoons all-purpose flour
3 cups whole milk, warmed
1 cup heavy cream
1–2 teaspoons kosher salt (adjust to taste)
Seasoning
3 tablespoons Adassa OG No.14™
Pasta
12 oz cavatappi
Method
1. Cook Your Pasta
Bring a large pot of salted water to a boil.
Cook pasta until barely al dente.
Drain and set aside.
2. Make the Béchamel
Melt butter over medium heat.
Whisk in flour and cook 1–2 minutes. Whisk in warm milk until smooth.
Add heavy cream, cream cheese, and salt.
Simmer 5–6 minutes until thickened.
3. Build the OG-Infused Cheese Sauce
Reduce heat to low.
Add cheddar, Gruyère, Parmesan; whisk until melted.
Add Adassa OG No.14™ and stir to combine.
4. Combine Pasta & Sauce
Fold cooked pasta into cheese sauce.
Transfer to buttered baking dish.
5. Bake
Bake at 350°F for 20–25 minutes.
Broil 1–2 minutes for golden top.
